Angela, an advertising representative and part of the creative team here at the magazine, made these Pumpkin Walnut Protein Bars to eat as a quick, nutritious breakfast. Perfect for fall, these bars are filling and taste especially great paired with a cup of coffee!
1 can pumpkin puree
3 cups oats
1 cup walnuts
6 scoops protein powder (for this recipe Angela used cinnamon flavor, but vanilla would also taste great)
2 tbsps honey
1/2 tsp cloves
1/2 tsp salt
1 tsp nutmeg
1 tsp vanilla extract
4 tbsp brown sugar
Preheat oven to 400 degrees.
Mix together dry ingredients in large serving bowl. Add eggs, pumpkin, honey, and vanilla and stir until all ingredients are equally distributed.
Use a glass pan (9×13) or cookie sheet to bake, and spray with non-stick spray or grease with coconut oil.
Spread the bar mixture into the bottom of the pan, evenly coating until about 1/4 to 1/2 inches thick.
Bake at 400 degrees for 17-20 minutes, allow to cool completely before slicing into bars.
